If ever I uninstall/deleted your plugin, all the changes I made that involves your plugin will have no trace whatsoever to my site?

You can disable the Compress option for the files https://premium.wpmudev.org/docs/wpmu-dev-plugins/hummingbird/#advanced-mode

If you deactivate Hummingbird all the changes made will be removed. So all the files will go back to the previous state.
