Seems to be a bug. You can specify logged_out_greeting in your setup code div. It will take higher priority than settings

Unfortunately code-level modifications are not currently supported within the WordPress plugin. Those kinds of modifications would only be relevant if you’re installing the Chat plugin code directly.

Will the text be corrected to be displayed correctly in relation to the language?

Here’s the developer documentation for the Chat plugin, if you do decide to go this route: https://developers.facebook.com/docs/messenger-platform/discovery/facebook-chat-plugin/ – however this would be a direct code install, rather than using the WP plugin, as and such, would be out of scope for support on this forum.
