translation: parallel sites or plugin?

  • I have a site that I want to have in english and spanish, but I don’t want to install those automatic translation plugins, since I know both languages fluently and want to translate myself.

    Does anyone recommend having parallel sites in these two languages, for example – https://site.com/en/ and site https://site.com/es/ (with separate wp installs)

    – or –

    Does anyone recommend a plugin that will allow me to custom translate each post/page, etc. by plugging in my own translation. And, of course, have the availability for the user to switch languages at any time.
