Trouble transfering theme settings from "localhost" to live server

In general, I discovered there are lots of problems when building site localy with XAMPP and publishing that site on the web.

However, there are problems with transferring virtue setting as well. Although I edited JSON file in Gedit and changed path, some settings were not transfered, like “Latin extended” selection for selected fonts.

Why does not wordpress and plugins use defined variable as site name, so when that data is changed, everything else works?
