You should be able to switch language when translating email templates in the settings. The WPML switcher is at the top admin bar when viewing the Email settings page. UM should work with different translation plugin with the Translation files available on https://translate.www.ads-software.com/projects/wp-plugins/ultimate-member/language-packs/
