Unable to insert images – following proper steps == nuke repave. Now what?

I love WP and I always install the updates when they are pushed to my dashboard. Just makes sense. Usually improved functionality AND security, right?
So I jump into 3.5. Everything is perfect. Next day, I suddenly can’t insert images. WP 101: Disable all plugins and clear the cache. Seemed like Yoast’s SEO plugin was the culprit. Fine.
Unfortunately, this did nothing to solve my problem, as it was back the next day (today). I switch to the new default theme. Try again. Still no dice.
Chance finds me here on the forum reading about how removing random plugins I’ve never even heard of solved the problem for them, and people suggesting additions to wp-config.php. Okay, I fire up FileZilla to have a look at wp-config.php. Would you believe I don’t see it? I know it’s gotta be there somewhere, but all I had was the sample.
Fine, I think, maybe the upgrade didn’t take right. Nothing wrong with upgrading the old fashioned way, right? It’s been a while, but it’s not hard. Someone around here said to overwrite all WP files EXCEPT wp-content. I did that.
Now I’m prompted to create wp-config.php in the browser. PROGRESS! Unfortunately, upon completion of that walk-through, I’ve got a 100% fresh, HELLO WORLD kinda website.
My previously installed themes are still there, wp-config.php is there, but everything else I’ve done since 2009 has vanished like a fart in the wind.
I’ve got my backup people working on it, but I’d really like to know what I did to so thoroughly screw this up. Any suggestions?
