Update a very old site with Astra and Site Origin/Elementor

Hi, I have a site I built around 10 years ago that’s in need of a redesign. I wanted to use the Astra theme along with Site Origin or Elementor.

A couple of issues arise:

The site has a good 600 posts that I don’t want to manage separately. I don’t know where the default Post, Page, and Archive files are to modify them in astra though.

I’d like to edit the Post files, as well as create custom category layouts using a page builder but don’t know if this is possible without reformating each post separately. I’m trying out the free versions of each.

I’m not a coder but had figured out the process bach in the day. The theme and page builder seem to add a layer of separation from the basic WordPress files that I have a hard time wrapping my head around at the moment. Maybe someone can point me in the right direction.
