Update website to WordPress

I want to make sure I understand. Are you creating an entirely new site with WordPress? Or are you migrating the content from the old site to a WordPress site?

Thinking about it, would I create the new site locally on my PC. Install a backup addon to back it all up. Then install WordPress on the hosting site, install the same backup addon and just ‘recover’ the website from the back up? Down time should then be down to a minimum?

I would suggest either creating a subdomain for your new site or a subdirectory (this choice is a little less complicated). You can build your site in the background with no interruption to the current site. Both of these articles are very helpful for either approach…
