Updating a custom fields from a page.

What I’d like to do is bring back a custom field into a textfield, change it and then save it on a normal wordpress page – preferably by AJAX to make it look better!

I was wondering if anyone knew any tutorials on how to do this or any existing functions I should be looking at.
