Updating a plugin for one blog site only

I have a question about updating plugins on a multisite instance. If I had a plugin that worked fine with one template on one site and fine on another site using a different template but then after updating the plugin it broke some functionality in only one of those specified templates. Could I update the plugin just on the one site that was ok?

This hypothetical, but it is a decision making question for my institution.
