While I will provide you with a way to roll back your site to a previous version (because it is your site and therefore your responsibility / headache), I do urge you to try and find the root cause of your issue.
Development will happen lightning fast until the end of the year, when Full Site Editing is planned to be rolled out, so it is preferable to learn how to make the most of new WordPress features now.
In order to determine if the issue is with the new editor, you can install the Classic Editor:
https://www.ads-software.com/plugins/classic-editor/
You can also install this plugin to check for theme / plugin conflicts without affecting visitors to your site:

If you are still sure that you want to go back to a previous version (and please do note that this may not resolve your problems), please make sure you have backups first and then you may want to consider using this plugin:

All the best!
