In my site CarDealerPlugin.com I didn’t request to create sitemap entry for post fields (post_type=cardealerfields).

You can block that in your sitemap creator plugin and deny it in your robots.txt

I have just done what you said.

In terms of SEO and to not lose traffic does the option of redirect https://autocamping.pt/cardealerfields/motor/ to https://autocamping.pt/autocaravanas-usadas/ it’s valid or can cause issues?

I don’t know too much over SEO. I suggest you open one free account on Google Web Master tools and keep an eye on. They usually let you know when something can hurt your ranking, then, you can fix it.
