Use excerpt

Hello,
I would like to use excerpts on sites. However, I do not find an option, to change form full quote to excerpt.
Example:
1. This page shows full quotes of related posts (selected by category)
https://keltenbergbahn.de/category/news/lagemeldung/2. As workaround, I have created a site with a plugin, showing the title.
https://keltenbergbahn.de/willkommen/aktuelles/lagemeldung/However, instead of these short titles I would prefer to have excerpts. How can I use them?
