Use User's Mail Address for Contact Form

Would it be possible to use the mail address of the person sending feedback through the contact form as the from-address instead of [email protected]?
Because right now, since every person using the contact form on my sit gets the same from address, the feedback mails get turned into one big mess of a mail thread in Gmail :s
