Use varied ages with inherit taxonomies option

Hello,

I have four questions:
1/ I use the “varied ages” and “inherit taxonomies” options. In the beginning, in my products, I had an option with the age specific to the product.

Now I only have “Restricted this content”, without being able to choose the age.

2/ With the “Inherit taxonomies” option, it is possible to choose product categories. What is the difference with going directly to the product category and checking “Restricted this content”?

3/ Today I have 250 existing products. All my products are affected by the age limit. Is it necessary to pass on each product to restrict them or the “Inherit taxonomies” option will suffice?

4/ With the “Inherit taxonomies” option, it is indicated: “Note the most restrictive will be selected”. Would it be possible to provide an option to do the opposite: “Note the less restrictive will be selected”?
