Unfortunately this is outside of the scope of what the plugin is currently designed for. I have very limited time and I have a hard enough time getting the smaller enhancements and fixes done in a reasonable time.

The best alternative is asking your users who would like to host tournaments to create accounts on the Challonge website. You may add them to your organization where they may add their tournaments. You may then use the short code and widgets to list their tournaments in the organization.
