Using Contact form as quiz- Chosen answers not showing in reply email

I am using Contact Form 7 to create an online quiz for my staff. It’s a simple 5 question quiz, answers A-D. I’ve set it up as checkbox answers, I’ve input choices A-D into the “Choices” box and copied and pasted the exact code into the Form. In the email reply that is sent to me, the answer that is chosen in the quiz is not showing, despite putting the correct code into the mail response.
For example:
Form:
Question 1 [checkbox CSTAPC1 “A. blah blah” “B. blah blah” “C. blah blah” “D. blah blah”]Mail message body
Answer: [CSTAPC1]And in the email that I receive, if I were to select A, B, C, AND D within the quiz, it will only show me the answer D. If I select just A, the answer will be blank. This is happening consistently with all of my questions, except the answer that will show on the email varies. Sometimes I will get A & C, but B & D won’t show up if chosen.
I’ve successfully set up 7 or so other similar quizzes following the same format, so I am extra confused as to why it’s not working now.
