Using the WP built in gallery

I am testing out WordPress built in gallery function with version 3.3.1Media Library a place to upload images?
I added all my images to the media library as I wanted to pick out images to add to my acting image page. Creating a gallery. But I did not notice how to do so. I tried attaching various images but it would not work.Deleting the images in the library and selecting a page and from there adding images they will me added to a Gallery. When I check the Media Library the various images are now attached to my acting page.
What I want to do with the built in gallery is this:
Title: Acting images
Title: From Krem Nasjonal
then 5 thumbnail images.Next title: From Gaate Music Video
5 thumbnail images.Next title: 21 Grams
3 thumbnail images.I am redoing this site in WordPress:
https://myactingportfolio.com/images.htmlAs I say it would be nice if I could just use the WP built in gallery function. Has anyone worked on the built in gallery at all for the last two years? It would be nice if someone could improve it so that I can make something like the images page above.
I checked out NextGen gallery for a few minutes but there was no intuitive way of adding images similar to my images page.Edit:

I have added captions to each image and would like to backup the page where the captions are located just in case I will need to delete the gallery again. So that I can add the captions again if needed. In which page are the captions stored?
