Version 9.1.0 Apple / Google pay Breakages

Our website(s) have been taking payments via apple / google pay up until the 9th Jan which seems to be when the 9.1.0 update was released. We no longer have the apple pay / google options on the checkout. However, on another one of our sites using the same theme and plugins, works fine (because it is still using version 8.9.0.

Any thoughts on why this might be? No changes made to stripe or the plugin that I can see, my settings for the working site are the same as the non-working one.

I am out of the office until Wednesday next week but will pick this back up on my return. I’ve only just seen the bug which is why it is such a late request (my apologies).
