Portfolio Gallery with 6 different image sliders in it

I’m using the free Virtue theme on a local host. and want to create a Gallery Page containing 7 thumbnail image sliders for 7 different categories (e.g. bathrooms, kitchens,etc) Ideally I’d like to be able to then click on each of those image sliders to open up a page with all of the images for that category on it (not another image slider). Is it possible?

Please note – I don’t want to use sub-menus for the categories from “Gallery” in the primary menu navigation bar – as there are too many of them!

Also can anyone explain how, in the “Portfolio Item” screen, the “Similar Portfolio Item Carousel” function works? It seems to display all the other Portfolio Items in my site – is it possible to restrict this to display just certain portfolio types?

I’m tying myself in knots trying to set something suitable up. Hopefully someone can advise!
