Want to change my category functionality/display

I want to change the appearence and functionality of my category list as it appears in my page (https://www.cafegeek.com/home/wp-admin/post.php).
I would like my default category to always be selected (but invisible) and to allow users to only select the sub-catgeory from a simple drop down list.
