    I see that I can change the overall background color by choosing a different overall style in the FSE e.g. Default vs. washed. But let’s say I want the deafult theme for fonts and general colors, but I want to alter the background applied to the body tag --wp--preset--color--raft-bg – where do I do that?

    Found it. It’s really buried.
    While editing Front Page template in the FSE:
    Styles Panel > Colors > Palette (click the pallete) > triple dot next to Theme heading > Show Details > Light Background

    While this may be a WP thing, I think you could short-cut this by making an override under Styles Panel > Colors > Color. You have Background. Why not add Light Background?

    I’m sorry to hear that it’s hard to find some settings in the theme and I’m glad that you managed to overcome it.

    For now, Raft is in an early stage of development and relies on the default behavior of all FSE themes. We’ll consider your advice for the future versions of the theme.
