Not really sure I follow. To place a product in a category you have to first create the category then assign each product to a category (this is done in the product edit page).
A portfolio is designed to show off ones work. You can see an example portfolio page here- https://themes.kadencethemes.com/virtue/portfolio/

Just keep in mind that it was made for premium users so you won’t have all the same features.
