why added customer data to the form?

In “customize” I have customized the form for recording customer data that is important to me.
I also included these in the “Notifications / To the specialist / Approved appointment” section.This is how I put it in the mail:
Nome: %customer_first_name%
Cognome: %customer_last_name%
E-mail: %customer_email%
Telefono: %customer_phone%
Indirizzo: %custom_field_1%
CAP: %custom_field_2%
Città: %custom_field_3%
Provincia: %custom_field_4%
C.F.: %custom_field_5%
Account Facebook: %custom_field_6%
Accettazione PP: %custom_field_7%My problem is that in this email new data is added to previous participants, adding to every new notification email. I wish there was only the data of the individual participant who booked the event, not all together.
I would like to know if this data can also be entered in the customer master section.
