woo database version keeps reverting – tried EVERYTHING

Hi,

I am a web developer with 18 years experience and over a decade wordpress experience. All I do is build websites all my life. This is the very first time in my life that I am not able to solve the bug myself and suffice to say I have tried everything so I really hope you can help me.

I have upgraded a site recently to the latest wp, woo, all plugins and theme. Running Divi. So everything is the latest version. BUT woocommerce DB version keeps reverting back to 2.5.5 every few hours on its own. I have been “upgrading” for about a month now and tryind different fixes all to no avail. I have a plugin custom tab light that requires woo version 3 so it keeps disabling itself hiding the all important tab on the product pages.

Things I have tried before clicking upgrade database:
disabling all plugins
setting default theme
various caching plugins, all disabled during upgrade
changed the db version in wp_options manually
deleted woo and reinstalled
searched google high and low for solutions and tried what was suggested

the host DOES NOT revert the database every few hours on their own as obviously all other changes stick only woo db version does not
