This is very unlikely to be due to my WooCommerce Breadcrumbs plugin. My plugin has nothing to do with how the breadcrumbs are generated (i.e. what breadcrumbs are displayed or not displayed). The only thing my plugin can do is affect the html around those generated breadcrumbs, not the content within the breadcrumbs itself.
Here’s a short screencast where I just setup a sample product with multiple levels of breadcrumbs, and it displayed the parent categories as you’d expect…

Your issue is most likely due to some other plugin that you’re using. My first guess would be your SEO plugin. I know you’re using Rank Math but I know that I’ve had issues myself with how breadcrumb categories are displayed due to Yoast SEO.
Rank Math appears to have some options in relation to how product categories are displayed, so I would suggest checking those options first. Here’s a few of their support tickets related to product categories.

If you’ve tried those options, I would suggest deactivating Rank Math temporarily and then see if this fixes your issues to confirm whether or not it is the culprit.
