Woocommerce Fatal Error

Hello,
I’m building a WordPress website using Woocommerce, and it used to work normally but when I came back to it the website was down. I managed to log in using the wordpress recovery system and turned off all my plugins. And after a few tries the plugin messing things up is WooCommerce, causing a fatal error.
It doesn’t come from a conflict with another plugin because I’ve tried activating Woocommerce with all other plugins disabled and it still won’t activate because of a fatal error.Here is the error message I’m getting :

Auto update was turned on so I’m guessing the issue comes from a recent update.
Can anyone help me with this, please ?
