Can you explain a little bit more what do you mean by page 2 or 3, it’s like you can select only the first 20 WooCommerce categories in the block configuration?

Yes – if I am in Admin and I go to Product -> Categories the Admin UI shows 3 pages of categories.

It also looks like this plugin only shows categories from page 1 of Admin UI screen. So the first 20 categories or so.
