Email ‘Send from’ email address is using wrong email address

Shop customer emails are being sent from a different email to the one saved in the following location:

WooCommerce -> Settings -> Emails tab -> “From Address”

System appears to be overriding WooCommerce settings above and sending from the site Admin email

I am confident I have the settings above configured correctly. It would be great if someone could suggest a solution or provide a php snippet to go in a child theme functions.php file that would force a send from email.
