    Actually no I didn’t use any plugin. I’m new to wordpress, and I don’t know how to add archives :(.

    In that case you desperately need to read some stuff from the Codex.
    And put a working link under your name so we can see what do you want to achieve. BTW, WordPress creates automatically the “archives” for you.

    Newbie member here. I’m using an amended version of ‘Journalized winter’ theme. https://www.andrewcairns.com

    The category listing on the LHS of the page says I have (for eg) 21 entries in acategory, but when I click on it, the display only shows as many as are are selected in the WP-admin options/reading/show-at-most field. I’d like to be able to click on the listing and see all entries for a particular category.

    I’m sure this has something to do with changing a straight link to an archive page, but I’ve only been at this three days and that’s a bit advanced so far. Any suggestions?

    Nope, that’s the normal behaviour of WP. Once the # of posts displayed is set, it is the same for any kind of page/view.
    There is a plugin somewhere that allows you to have different number of posts displayed in different views, I just cannot find it now.
