If you’re referring to the fields not being added to Google’s Structured Data https://developers.google.com/search/docs/guides/intro-structured-data, this is expected and normal, as these fields are dynamic and created by the users (you).
In any case I’ll take a look into it an see if there’s a way to add this to the plugin. I’ve opened an enhancement request in the plugin repository: https://github.com/iamgabrielma/WPJM-Extra-Fields/issues/15
