We have checked on our side, and able to translate the content of outline, includes, exclude along with overview text.
You just need to add new page for each trip by clicking ‘+’ button like in screenshot https://prnt.sc/1hfmhzl.

You can see it in this example:

https://www.galapagosliving.com/en/itinerary/los-tuneles-isabela-en/
https://www.galapagosliving.com/de/itinerary/los-tuneles-isabela-de/

They show the same content in outline, only the text of the overview is in the correct language.

Anytime i try to change content in Outline in one language, it will apply to ALL languages.

Actually, we are sorry to say that WP Travel plugin is not compatible with Polylang however, worry not it has already been noted as a Feature Request so we will work on it in our near future.

Also, if you are willing to translate the tabs then worry not, the strings that are used in tabs cannot be translated as the strings for tab are editable and not hardcoded. So, you have to add a translated string for the tab manually.

Further, WP Travel plugin is compatible with the WPML plugin as using the WPML translation plugin, you will be able to display your site in multiple languages.
