    Whoops, our url is https://www.meissnernordic.org

Though we don’t see a caching plugin installed on your site, we do see this code which indicates that caching may indeed be happening somewhere along the line: advanced_disable_cache':false.

In addition, the switch link either does not trigger the desktop theme or the site is being served the cached mobile theme. Have a look into any sources of caching to locate where your trouble may originate.

We started using CloudFare last week, which is a CDN and it involves some caching. I’m looking at their options to see if I can fine tune them to now interfere with WPTouch and mobile detection.

When I changed our DNS servers back to the original host, and away from CloudFlare’s, then the problem seems to be solved. Any thoughts on caching and WPtouch?

Yep, CDN caching can serve desktop themed pages to mobile devices. You might try by disabling the “Website Preloader” Pro feature in the Cloudflare settings to see if that helps.
