Youtube gallery page from post category

Hey all
I have a site where users are invited to submit their favorite youtube videos. We have a form which allows them to submit the url of the youtube video which then becomes a post in a specified category. What I want to do is create a gallery page for that category with the videos displayed as thumbnails which a user can click on to see the video. I’ve seen plugins that do this but they all seem to make the gallery from a youtube account or playlist and that won’t work for me because I need to create the gallery page from a series of posts in a category. Users are submitting videos from all over youtube. Does anyone know what might work for this?
