I hadn’t had that enabled and changed it, and that meant that while editing the background was black and text white.
However, I still have problems with the displaying of blog posts. I’ve uploaded some screen shots to illustrate.
This is a blog post on chrome or edge on Windows 10, its how I want it.

If you request the desktop site from mobile, it works and you get this:

I’ve no idea if this is a browser problem, a config option I’ve got wrong or missed, or something with the theme.
