I can only select the theme in the individual table. Since I don’t have the Pro version.
But I can’t find out how to apply the global settings to change the color of the header.

I don’t know why, but it is now displayed correctly. Possibly a problem with the cache?

The sidebar with the settings is hidden by default. That’s why I didn’t see this box at all.

Okay, i have found the issue at myself.
the problem ist, that the color of the text for quantity is white. if your remove the background color, you didn’t see anything.
maybe you can change that in the next update?
i changed the size of the logo in the mail-template.php file from width of 190px to 595px.

so, now the plugin works perfect for me. thank you!

how is it possible to send you screenshots of the settings and the created pdf?
another problem:
the logo-image is very very smal at the pdf. i used a logo with 1344×1815 px but it is terrible small at the pdf.

No, this option isn’t checked.
