There isn’t a feature like that yet, but we do plan to create something like that in the not too distant future.
1. No option for that, I will take that up as an idea for the developers to consider.
2. The form builder will allow some changes to labels, or you can translate the plugin to change them.

when you edit a category you can find schema selection on the same edit screen as a select field at the bottom.

The predefined field is for users who want to get up and running quickly, so, it comes with presets that ‘just work’.
If you know your requirements you can add a custom field with additional options, some of which, like webp image formats, may require some technical know-how.
