You just find the language file in that plugin in the lang folder and change the pre-set value of “Not available for” with some random message you’d like.

I am trying to do the opposite. I want to not be able to make reservations for the same dates as already reserved and approved ones exist.

Regarding the one resource with lots of places, I guess the best you could do is to create one resource and use the “Count of resources” field, presented in the administration. As far as I know, that’s the exact purpose of this field.
