Finally found the “option” settings page in the “Settings” admin area! This may be obvious to a seasoned WP user, but as a newbie it had me stumped for days. I was even trying out other plugins. Now that I have this problem solved I can recommend it to others.

By “options”, do you mean the options.php file or the dialog box used to specify Map, Track, Style, etc.? I can see code for $distanceUnit and $gmapv3_disableDefaultUI in options.php, but no corresponding option in the dialog box. I’m using version 3.1.
