For #1, the Social login SSO flow uses WordPress protocol. Still, it is different from the WordPress login flow, so this might be the reason the “theme email verification” feature is not working if you want to verify the user email of the social login user. You can use the social login email verification feature.
For #2, you can either use the redirect option for this and redirect the logged-in user to the page where they can select the roles or use the social login custom registration add-on where you can give the user the ability to choose the role.

Due to some conflict with the upcoming social login application, we have removed the windowslive from the latest version of the social login plugin.
If you want to use windowslive you can download the older version(7.5.11 or older) of the plugin.
