From the logs, it appears that the error you are experiencing is primarily “Unable to detect valid feed configuration: No catalog ID” according to the logs.
Can you please check your external business ID and ensure that you have only ASCI characters and the hyphen? Also, check your currency settings to be sure they match.
If that isn’t the issue, I would recommend you to check if two-factor authentication (2FA) is enabled on your Facebook account.
When connecting a Facebook Page or Account to a third-party application, like WooCommerce, 2FA is required by Facebook.com.

Can you please make sure that 2FA is enabled for your account and then try to connect your store to Facebook again?

It sounds like your WooCommerce Payments extension on your site is set to “Authorize” orders instead of “Capture” them. Can you check that?
Check this screenshot – https://d.pr/i/OLvMLo. You can check this on your site via Payments > Settings. If that box is ticked on your site, then it means payments will not come to your WooCommerce Payments account until you authorize the orders. This is perhaps why you have not been getting any money.
Charge must be captured on the order details screen within 7 days of authorization, otherwise, the authorization and order will be canceled.
Here’s how to manually capture charges.
If you want, you can turn the option off to automatically capture charges.
If that isn’t the problem (that is you check your site and the box isn’t ticked), let us know. Also, when responding, please share a copy of your site’s System Status to help us troubleshoot. You can find it via WooCommerce > Status. Select “Get system report” and then “Copy for support”.? Once you’ve done that, paste it here in your response.

I just checked your site on a desktop computer and it displays the products in 4 columns. The products are equally displayed on mobile in 2 columns. Can you clarify where you are still having issues?

Add this CSS code snippet to your site via Appearance > Customize > Additional CSS:
@media (max-width: 480px) { ul.products, .wc-block-grid__products { column-count: 2; } }
The above code snippet will make all product listings on mobile on your site have two columns.

Setting up tax with conditions as you described is not possible by default with the WooCommerce inbuilt tax settings. You may need a plugin to help you achieve this. Perhaps one of these will be of help.
I’m not aware of a tax plugin that allows you set up tax with conditions as you described so I will be unable to make a solid recommendation, sorry.

That several products were marked out of stock on your client’s store overnight is indeed a strange one. My suggestion is to talk this over with the site’s hosting compoany’s support. Perhaps their server logs will have some more information on what happened so you’d know where to begin working.
My colleague did mention the possibility of a plugin conflict and I agree. However, as you rightly stated, it is nearly impossible to do a successful conflict test in this case as there is no issue to refer back to. Your server logs remain your best bet in this case.
