Thanks so much for sharing the additional details with me! Based on the stack trace, it does look like this could be related to errors when saving a card.
However, we use “tokenized” in two different ways. Sometimes we use it to talk about saving a unique token that matches up with a customer’s payment profile, so recurring payments can be processed. In this case, however, the tokenization mentioned in the error message is something expected that happens as part of every e-commerce transaction, where the processor gives us a “token” that’s used to identify the transaction for processing. It looks like this may be the part of the process where we’re seeing an error raised. In this case, a type error is raised from a PHP function expecting a nonce and getting a null value instead.
The likely culprit here is that no nonce is ever being sent to the store in the POST request when the checkout form is submitted. With this in mind, I suspect that we might be able to gather a few more details by using the browser’s developer tools on the checkout page. Would it be possible to share the store URL so we can take a closer look?

As WooCommerce recently moved away from their previous versioning to be more in line with the WordPress version system, WooCommerce 6.0 is considered a minor release and fully backward compatible.
We’re currently only updating the tested up to tags for major releases, or if we need to release a plugin fix or new feature, whichever comes first! This is to avoid “empty” releases that only require a tag update so we can focus more on bug fixes and new features for you. I’m not seeing any fixes the developers are working on at the moment, so while I can’t say when this tag would be updated just yet, there shouldn’t be any worries with running it on the latest and greatest WooCommerce version.
If you’re concerned about compatibility, I’d recommend trying things out on a staging site first. If your hosting company doesn’t provide a staging site, you can create one with the WP-Staging plugin:

Once you create the staging site and update WooCommerce there, you can test things out with our Extra Product Sorting Options plugin. If all goes well, you should be good to go to update your live site!

I’m currently running version 5.8.0 of WooCommerce and using Sequential Order Numbers on my local test site, and I’m afraid I’m not getting the same error. So I’m wondering if the conflict may be coming from somewhere else.
As a first step, I’d like to see if it might be that a conflict is responsible for this issue, and I’d like to try to rule out a theme conflict first. Would you please temporarily switch to a default theme, such as Twenty Nineteen, and let me know if the issue persists?
You can do this without disrupting your live site by using a staging site or by using the Health Check plugin which you can download here:
