Thank you Joost.
Based on your answer I will immediately deactivate the new plugin Woocommerce Paypal Payments.
I cannot risk any problem before my next launch.
As long as Woocommerce Paypal Checkout Gateway still works, I will keep it as my only active plugin to avoid conflicts.
Later when Woocommerce Paypal Payments becomes more stable and becomes the only official Woocommerce-Paypal plugin, and you officially phase out the old Woocommerce Paypal Checkout Gateway, only then I will switch.
I have had too many bad experiences with plugins (I am not particularly referring to Woocommerce) and payments are too sensitive to run any risk if this plugin is so new.

Indeed that was the cause, I changed the option into “Itemized” and the rate name is displayed

Under WooCommerce > Settings > Tax and then Standard Rates I always had descriptive tax names like “20% AT VAT” (Austria), “21% BE VAT” (Belgium), etc etc for the whole EU.
But they do not appear on the PDF… the PDF shows what I paste here below:
Subtotal €1,00
VAT €0,21
Total €1,21Instead of just “VAT” it should have displayed “21% BE VAT”, but it does not.
Is there any way I could attach an image to show you how under WooCommerce > Settings > Tax and then Standard Rates I have descriptive tax names?
(I even chose carefully the names for Reduced Tax Rates and Zero Tax Rates, for each EU country)I appreciate your support, I am very grateful because you reply so fast – I need to go live selling on September 1 and I am panicking

Thank you for your reply, the ticket is marked as “Resolved” but it is not.
I am not sure where the Woocommerce configuration of the text “VAT” is, but anyway it is not so simple in Europe as to change a fixed text.
We have something called MOSS = mini one stop shop since 2015 and we need to apply the VAT% corresponding to the country of the customer.
So it is not one fixed text, it depends on each transaction.
A am reading https://ec.europa.eu/taxation_customs/business/vat/eu-vat-rules-topic/vat-invoicing-rules_en and under “Information required in all cases” it says that it is required to display:
* VAT rate applied
* VAT amount payable
If we only show the VAT amount we are not complying with the EU requirements
