Some of the functions (JS code) are not AJAX compatible by default, so you need to make them AJAX compatible.

To filter a product grid created with Elementor, you need to use the PRO version of the Filter Everything plugin. The free version only allows filtering of WordPress’s native WP queries on your own archive pages for specific post types. For instance, if you are using a native WooCommerce shop page that is not built with an Elementor template, you can filter products using the free version of the Filter Everything plugin.

You can create a checkbox custom field with the predefined values like:

…So when you go to your post you choose the needed values, and by this custom field, you can create a filter set.

1) No, it is not possible at the moment as it is related to the plugin functionality, but there will be another mode that will work without it with future updates.

That is absolutely correct behavior with the “Apply Button” It uses the AJAX to update the rest filter terms when you choose any filter term, to display correct counters, and other changes.
In future updates, this behavior will be changed, or added one more template that will work without such updates.
