The plugin as explain in its description provides basic and common schema.org structured data markup to cover a standard WordPress setup, means getting rich results like star rating is not possible without additional custom coding.
Maybe have a look at our premium schema plugin, and it’s extension like Schema Reviews and Schema Rating.

If you do have a lot of videos and you don’t want to go through hassle of editing them all, I would recommend considering the paid version of the plugin.
The fully automated VideoObject structured data is part of the premium version of Schema plugin and it require a YouTube API key to work properly.

P.S. Please, update the plugin to the latest version since I’ve released an update 1.7.8.9 just now to add embedUrl property automatically to VideoObject, which validate the markup output.

It has support for VideoObject structured data. So, once you’ve configured the plugin settings and enabled video object on a schema type, the plugin will automatically discover embedded videos within content and include it in the structured data output.

Please, update to the latest version and see if this solves the issue.

The markup doesn’t output Video Object unless you activate it and there is an actual YouTube video URL in the post content.
I still believe this is just a caching issue, it maybe not caused by a cache plugin though. The Schema plugin it self caches markup in post meta, then flush it when you update the post, or generally when saving plugin settings.
Can you please try again, this time after activating the plugin go to the Schema plugin settings and save it once, then test your markup again.
Let me know how it goes.

Just to make sure, deactivate the Schema plugin and test your page again.
P.S. If you caching your site, clear cache whenever you modify your site so that changes can take place.
