I have the same problem, but thank you for the explanation. Understandable why it is designed that way. I decided to use CPTUI plugin to create custom taxonomies so it could be added on the filter, I’m not aware that’s the better way to manage products before.

Many thanks for the suggestion. I’ll try to ask on Divi community regarding this problem.
Though, I try testing with changing to non-DIVI theme/builder, and found that even on other theme that use the default blocks builder, only one Woo Images module could be displayed within a page. Example:
It’s like Woocommerce prioritize one image module hence why on my website that use DIVI, only one module works properly while the rest not updating properly; but on other theme using default builder, only one module that could be displayed on front end despite having two modules on builder.
From what I understand, the Woo Images module on DIVI just add additional customization option on the default Woo’s product images module; and considering the problem encountered on both DIVI theme and other theme that use default builder, I don’t think this is a specific DIVI behavior but rather something to do with the Woocommerce itself?
Could anyone try test having multiple Woocommerce image module on a product page that have product variation that shows image variants, either using default, DIVI or even other builder like Elementor, etc; and see if all of the module could work properly showing the variant images?
