@ihereira?, you mentioned that woocommerce stripe payment gateway does not save user’s payment info in the site’s database. Tokens related to payments are saved.
I think @ckadenge already provide clarity to this, please note that the entity responsible to save the data securely is Stripe, it is also true that WooCommerce creates a token, but without sensitive information. In this case, you can consider the customization options mentioned at the beginning of this thread.

I understand you have past clients info out of WooCommerce since they do not have accounts or are not users.
I understand you would like to access their older orders. Were those orders made in WooCommerce as guest users? Or were those orders created out of WooCommerce? Please provide more information to point you in the right path.
One alternative to create customers in bulk is using the plugin WP All Import (Please note, this plugin is not supported by us, you will want to reach out to their support for further assistance).

As mentioned by @anastas10s I think you can keep only one tax rate for the Netherlands (At least only one while you check for the issue).

You can control how customers interact with their cart and the process they will follow after adding items to it.
You can adjust your WooCommerce settings:
1. Go to your WordPress Admin area.
2. Click on WooCommerce > Settings.
3. From the top tab options, go to ‘Products’.
4. Click the option “Add to cart behaviour”.
5. Check the box “Redirect to the cart page after successful addition”.

Updating WooCommerce can be quite a task, especially when there’s a large version jump like in your case.
Using a staging site is important to make sure you can test the changes first, if your host doesn’t offer that option, we recommend WP Staging for quickly spinning up a new test site.

It seems like there may be some issue on the site.
Can you tell me how are the products being added into the site? Manually, via default importer/exporter, or another way?
I would recommend running a conflict test by disabling all plugins except for WooCommerce and switching to a default theme like Storefront. From your description, it sounds like there’s an issue with the way tax is saved and then applied when you check back later. This doesn’t sound like intended behavior.
Firstly, please ensure that all your settings have been inputted correctly. The tax should only be applied to edible products, so check that these items are properly categorized in your inventory. I added a processor, and now there’s a flagged “Payment” item on the admin menu, which goes to a blank page. Any idea what’s up with that??
Does the source site have the WooCommerce Payments installed? And what about the staging site? May I ask how the site was cloned? It appears that the issue could be when the site was cloned. I am asking because if WooCommerce Payments is installed you will see the Payments tab in your backend, otherwise it will not be visible.

I understand that you’re currently unable to access your product feed data in Google Listings & Ads and are receiving a suggestion to try again later.
The product feed page undertakes a substantial amount of processing. Consequently, it could take some time for the page to load. The error message you’re seeing might suggest that the script has run out of time, which we’ve encountered in previous situations with similar errors. Those were resolved by extending the maximum run time for PHP scripts, done by adjusting the max_execution_time configuration. In addition, consider increasing the memory_limit settings in your php.ini file.
If the above does not help, to get more information about the issue, can you navigate WooCommerce > System Status > Logs and provide us the error messages found on there?
