I want to preface this with I am not the plugin author, and when you edit a plugin file, updates will blow your changes away.
I had the same problem and the solution was editing /wp-content/plugins/ni-woocommerce-product-enquiry/include/ni-enquiry-init.php on line 252 change
$request[“ni_contact_number”] to $request[“ni_enquiry_description”]
