OK, found the solution.
Instead of using Vimeo’s “choose thumbnail” feature, create the thumbnail locally, and size it exactly:
1280×720 px
Upload the thumbnail using Vimeo’s Settings page, and it properly displays.
Even though my video source is 720p, Vimeo’s interface does not correctly generate the 1280×720 pixel thumbnail.

Is there a way to load the smaller thumbnails from Vimeo? The resulting Vimeography image tiles are nowhere near the source HD frame size, so it would be an adequate workaround.
I looked at the source code on my page. Here’s what I found:
The references of the thumbnails show up like this:

The WORKING images do load when I paste the image reference into my browser.
The NON-WORKING, custom images give me this error:

Allanedits: Hm, just tried that, but still got a blank tile.
I also tried deleting all the thumbnails I had added in Vimeo, and then adding *only* one using the “random select” method — I thought maybe Vimeography only responds to the first slot in the thumbnail ‘album’ on the video settings page. Nope. And now I’ve lost my default thumbnail, the only one which had worked.
Also grabbed Vimeo PLUS account for a month to see if that changed anything, but it still is not displaying properly.

I can confirm this issue. Any thumbnail other than the randomly selected default image is not displaying in Vimeography. This includes Vimeo’s “choose a thumbnail from the video” feature. Doesn’t show.
Likewise, the issue persists even on Vimeography’s theme testing page, so this is not a problem specific to my WordPress installation.
I have also installed Vimeography Pro, on the off-chance that authenticating the Vimeo API would resolve the issue, but it hasn’t helped.
