The ecommerce functionality in a WordPress theme is typically provided by a plugin, so it’s best to find which plugin suits your particular needs the best. I have found WooCommerce to be the best, and should be able to do what you described.

Having a separate mobile site sounds like a lot of unnecessary hassle. Have you thought about using a mobile plugin like https://www.ads-software.com/extend/plugins/wptouch/ or using a responsive theme so you don’t need a separate mobile version?

It will be hard to find a theme that meets all those requirements out-of-the-box, particularly numbers 6 and 10.

If you don’t mind paying for a theme, check out the themes from StudioPress. They have some nice themes with integrated email sign up and social icons etc.

Otherwise its easy enough to add that stuff into any theme with some plugins.

You have quite earthy colors, so maybe a shade of red like the trees in your header image will match.
